Cauliflower with yoghurt recipe

Ingredients:

  • 0.5 kg cauliflower
  • 250 g parsley
  • 300 g yoghurt
  • 50 g butter or ghee
  • 50 g cheddar cheese
  • a pinch of asafoetida
  • 1/2 tsp tumeric powder
  • 1/2 tsp cumin powder
  • 1 tsp black salt

Instructions:

  1. Preheat the oven to 150 C. Wash the cauliflower and break into florets – toss it with asafoetida and tumeric and place into the oven. Roast for about 10-15 minutes (depending on your oven) until it’s al dente (neither soft nor hard).
  2. Wash the parsley and chop it finely. Fry it with ghee or butter in a frying pan over medium heat for about 15 minutes. Add about 50 ml water and stew for about 10 more minutes until it is soft.
  3. Mix the parsley with yoghurt, salt and the rest of the spices, and pour the sauce over the cauliflower.
  4. Sprinkle the cauliflower with shredded cheese and roast it in the oven at 180 C for about 5 minutes till the cheese gets a nice golden crust.
