Russian cheesecake bites in carob coating
Filling (for about 20 bites):
150 gram butter
250 gram sugar
900 gram dry farmer’s cheese (tvorog)
1.5 gram vanillin
Coating:
150 gram butter
75 gram sugar powder
150 gram carob
You will need:
Ramekin or mold for freezing your bits in
Pan
Tongs
Wire wisk
Waxed paper
Instructions:
Step 1:
First prepare the filling: Melt butter. Add sugar and vanilla. Mix. Add farmer’s cheese, and mix well. Use a blender or a hand mixer – the filling should be homogeneous, with no curds.
Step 2:
Form the cheesecake bites either by putting the filling in a mold or forming shapes with your hands. Place the mold into a freezer for a couple of hours or leave it there overnight.
Step 3:
Prepare the coating: Melt the butter on a water bath until it starts boiling, constantly stirring it with a wire wisk. Add sugar powder, stirring it all the time, then carefully start adding carob, continuing to stir.
Step 4:
Take out some of the frozen bits (not all of them at the same time, otherwise they melt before time). Take one bit at a time with the tongs and dip into the liquid coating. Place it on waxed paper. Repeat the procedure with each bit.
Note: the temperature in the room shouldn’t be too high. If it is, the process is going to be a little bit tricky, because the bits are going to be too soft and impossible to dip.
Step 5:
Place the coated bits in the freezer for 20 minutes.
